TERROIR
Grapes are grown in 30 hectares own vineyards located next to the winery on the Southwest slope. The terrain is hilly and the area combines unique natural conditions – a combination of suitable soil, terrain and climate. The planting material is of the French company “Guillaume” and includes elite white varieties Chardonnay, Sauvignon Blanc, Traminer, Riesling, attractive red varieties Pinot Noir, Cabernet Franc and the local Bulgarian Vratsa Muscat variety.
The climate is transitional-continental. The annual duration of sunshine is 2172 hours, as for the vegetation period / from 01 April to 30 September / it is 1526 hours. Annual temperature sum is 3100 – 3700°C. Soils are represented by calcareous sandy – clayey deposits. It is characterized with good air, permeability and water holding capacity.
PHILOSOPHY
In the past the name of the village of Blaskovo was SALLA, it originated from the word SALIH meaning – “PURE, NICE, GOOD” – in perfect unison with the idea to have a winery cellar in the area. Also the pronunciation of “SALLA” resembles the movement of the tongue to the palate when tasting our wines.
Our goal is to make wines with own image, character and individuality, distinct and identifiable in limited series. Through experiments with technology practices we aim to give maximum expression of the terroir and the microclimate.
We treat each detail with love and attention – from planting of the vineyard, growing of the grapes to receiving the ready product – the wine. It gives us confidence that we are on the right track – help more people breed the wine culture within themselves and look for the good quality and various wine tastes.
WINEMAKING
For the production of wines at SALLA ESTATE Winery are used methods which spare the raw material in order to give full expression of variety’s peculiarities and unique terroir. The wines are made with the most contemporary equipment and applying the latest contemporary tendencies – without any compromise when it comes to quality.
White wine is made from grape varieties Riesling, Chardonnay, Sauvignon Blanc, Traminer and Muscat Vratsa. Red wine is made from grape varieties Cabernet Franc and Pinot Noir. Rosé wine is made from grape varieties Cabernet Franc and Pinot Noir, with white wine technology production. The grapes are picked manually in trays of 10-12 kg and immediately transported to the winery.
